Cod and halibut

All year

Varangerfjorden and the Barents Sea are among the world's richest fishing waters. Cod, halibut, wolffish and saithe are caught here. Many restaurants serve the day's catch — it doesn't get fresher than this.

💡 Ask the restaurant what was caught today — 'catch of the day' is always a good choice.

Laks fra Varangers elver

Salmon: July–September. Whitefish: all year.

The rivers of Varanger — Neidenelva, Jakobselva and Komagelva — are among Norway's finest salmon rivers. Whitefish from inland rivers is another gem: white flesh, mild flavour, and easy to prepare. Try smoked whitefish — a local favourite.

💡 Smoked whitefish is a rare delicacy — look for it in local shops in Varanger.

Kongekrabbe-opplevelsen

The absolute best thing you can do in Varanger is a king crab safari. You head out onto the fjord, pull up the pots, hold a gigantic crab in your hands — and eat it fresh right there. Nothing beats this.

Der Barentshavet møter tundraen

Kongekrabbe fanget i fjorden. Multebær plukket på tundraen. Reinsdyr som har beitet fritt gjennom arktisk sommer. Varanger har råvarer som resten av verden betaler gull for — her spiser du dem der de lever.

Varangers råvarer

King crab

All year, best in winter

Russian king crabs arrived in the Barents Sea in the 1960s and are now a delicacy. They can weigh up to 15 kg and span 1.5 meters. Fresh king crab from Varangerfjord is among the world's finest.

Book a king crab safari — catch it yourself and eat it fresh straight from the sea.

Dried fish and salt cod

Dried Feb–May, available year-round

Dried fish (stockfish) from Finnmark has been one of Norway's major exports since the Middle Ages. Cod is hung to dry in the pure Arctic air and wind. The result is an intense, concentrated flavour that Southern Europe loves.

Easy to take home — dried fish keeps well and is a perfect Varanger souvenir.

Reindeer

Slaughtered in autumn, available year-round

The Sami in Varanger have practised fishing and herding for thousands of years. Reindeer meat is lean, flavourful and natural — the animals graze freely on Arctic tundra. Everything from prime cuts to dried reindeer (suovva) is available.

Try suovva — smoked reindeer meat that is eaten on bread or in delicious stews.

Cloudberries

August–September

Cloudberries are called 'Arctic gold' — and rightfully so. They grow only on Arctic tundra, cannot be farmed commercially and must be hand-picked. The flavour is complex: sweet, tart and slightly earthy. The ultimate Varanger taste.

Ask locals for the best picking spots — they're often kept secret!
